Sustainable Restaurant Process Green Waste In Worm Farm

Greenhouse endeavored to be as sustainable as possible. There was a roof garden where herbs and vegetables were grown, fresh milk was delivered in buckets straight from the farm, the garden was watered with a drip irrigation system, worm farms were used to process green waste, straw bales were used for insulation, chairs were made from road signs and the light shades were made from fencing wire.

With indoor worm composting, or vermicomposting, a worm habitat is created in a bin with 8 to 10 inches of shredded moist newspaper as bedding. Fruit and vegetable peelings are buried under the newspaper. Then worms, which must be red wigglers, are added to create a fertilizer by eating the newspaper and food scraps.

Under the direction of Ken Schaffer, Naturalist, Grounds Keeper and Ecology Club Advisor for Oakton Community College in Des Plaines, Oaks pre-school students house and maintain an indoor worm composting bin that was provided by the Solid Waste Agency of Northern Cook County (SWANCC), as part of its Waste Reduction Grant Program. Worms process organic matter, such as fruit and vegetable scraps, coffee grounds, egg shells and paper. After worms eat this food, the castings or compost can be used in the garden as a soil amendment or fertilizer.

That first bin with holes goes on top of two bricks at the bottom of the bin without holes. Stacking them allows the excess water to drain from the top bin, preventing stink. Another thin layer of wet newspaper helps cool the worms and discourage flies. The worms need time to get comfortable in their surroundings before their first feed.
